Vinisterra was founded in 2002, born out of the friendship between the entrepreneur, Guillermo Rodriguez Macouzet, and the enologist, Christoph Gaertner and their common passion for wine and the terroir of Ensenada valleys.

We are a micro-producer winery with 15 collaborators, producing 50,000 bottles of wine per year with a deep respect of our lands and our community. We try to express with pride the great nature of Baja California through our wines.

The grapes for our wines grow in our vineyards in Santo Tomas and Guadalupe valleys in a surface of 11 hectares.

Our winery was built out of bricks that were made with the soil of the town. We work with a minimum intervention oenology so consequently the wines of every single vine can express itself with a unique and pure taste as much as possible.

TASTING NOTE A wine from the coast. It is a fruity, mineral and dry wine, special for seafood. Yellow shiny straw color, with aromas like guava, white pulp fruits and with a subtle floral and mineral notes. It is a light bodied wine with medium presence, fresh and well balanced. Recommended for appetizers, and by itself, it is a noble accompany for food. Its freshness is perfect with the seafood products of Baja California

TASTING NOTE A summer wine, especially for fresh seafood, appetizers and barbecues. It has a light pink color with aromas of red fruits, bananas, marshmallow, peach and mineral notes. In the mouth can be found fruit flavors, wet stone and graphite. It is a light bodied wine, medium presence and mineral finish.

FOOD PAIRING Great for appetizers such as cold cuts, salads, seafood, vegetables, grilled meat, pastas or any dishes with fresh tomato, fresh and aged cheese.

TASTING NOTE A Rioja like wine with Baja Californian identity from our Cascabel vineyard in Santo Tomás Valley. The Tempranillo structures the very notable fruity and vivacious character of the Grenache that results in an eloquent assembly and a strong personality. A dark and shinny red garnet colour. It is straight and open in the nose with aromas such as red fruit, cherry, currant, cranberries and blueberries, with spices notes such as vanilla, clove, anise, tobacco leaf, wet stone, graphite. It is nice, fresh and clear to the palate, with a lot of presence, very well integrated and present tannins. Flavors of primary fruit, spices, mineral and oaky notes. Precise, complete, with a lot of potential and a long finish. A generously expressive wine, with great presence and personality, ready to drink and it can be kept up to 10 years or more.

TASTING NOTE An immensely elegant and distinguished wine. It is the signature of our “Pedregal” vineyard in San Antonio de las Minas, Guadalupe Valley. Medium intensity ruby red color, with predomination of ripe fruit aromas such as red cherry, blackcurrant, prune, combined with cinnamon and clove, mineral notes and wet stone. Complex and intense. In the palate the wine’s intense, big, full bodied, it confirms the ripe fruit, mineral and spices aromas, dark chocolate and tobacco leaves. Powerful and elegant with mature and persistent tannins. It is ready to drink and can be kept up to 10 years or more.

FOOD PAIRING Intense flavor dishes, greasy, elaborated food with fine herbs, mushrooms, bushmeat, lamb and steaks.

NOTA DE CATAThe Nebbiolo of Baja California from the “Cascabel” vineyard interpreted by Vinisterra. Dark and shinny ruby red color, intense aromas such as blue fruit, black plum, box of cigars, some spices as well as cinnamon, anise, asphalt, wet dirt. Very concentrated to the palate with a lot of personality, fruits such as berries, cassis and mineral notes, full bodied wine. Very present and well integrated strong tannins but at the same time elegant, refreshing and strong-long finish. Ready to drink now and it can be kept in cellar up to 10 years.

FOOD PAIRING Greasy, intense, heavy seasoned, complex dishes, stews, suckling pig, greasy steaks, lamb.

WINEMAKING PROCESS Alcoholic fermentation in stainless steel tanks at a temperature of 18ºC (64.4ºF) for 5 weeks. Malolactic fermentation made 50% in stainless steel tanks and 50% on second use french oak barrels, rested in tanks and oak barrels for 5 months and bottled together

TASTING NOTE A very special limited edition wine of our winery. Bottled the Viognier of our Cascabel vineyard in Santo Tomás Valley with its own label, the first time being 2019. Light yellow straw with green hues, it presents aromas such as quince, pineapple, peach, citrics, floral and subtle notes of ageing in barrels. A full body, complex, structured and elegant white wine.
